BBQ Oyster Mushroom Kebabs

Ingredients

  • Kebabs:

    • 1 pound oyster mushrooms, cut into bite-sized pieces
    • 1 red bell pepper, cut into 1-inch pieces
    • 1 yellow bell pepper, cut into 1-inch pieces
    • 1 red onion, cut into wedges
    • 1 zucchini, sliced into thick rounds
    • 1 cup cherry tomatoes
    • Skewers
  • For the Marinade:

    • 1/4 cup olive oil
    • 2 tablespoons soy sauce
    • 2 tablespoons balsamic vinegar
    • 1 tablespoon maple syrup or honey
    • 2 cloves garlic, minced
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon dried thyme
    • Salt and pepper to taste
    • Juice of 1 lemon
  • For Garnish:

    • Lemon wedges

Instructions:

  1. Prepare the Marinade:

    • In a large bowl, whisk together the olive oil, soy sauce, balsamic vinegar, maple syrup (or honey), minced garlic, smoked paprika, ground cumin, dried thyme, salt, pepper, and lemon juice until well combined.
  2. Marinate the Vegetables and Mushrooms:

    • Add the oyster mushrooms, bell peppers, red onion, zucchini, and cherry tomatoes to the bowl with the marinade. Toss everything together until the vegetables and mushrooms are evenly coated. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Assemble the Kebabs:

    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated mushrooms and vegetables onto the skewers, alternating between different types for a colorful presentation.
  4. Grill the Kebabs:

    • Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
    • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the mushrooms are cooked through.
  5. Serve:

    • Transfer the grilled kebabs to a serving platter. Serve with lemon wedges on the side for an extra burst of freshness.

Tips:

  • You can also cook these kebabs in the oven. Preheat the oven to 400°F (200°C) and bake on a parchment-lined baking sheet for about 20-25 minutes, turning halfway through.
